Home Cook - Lotus Soup

So excited, haven't cook this soup for a long time already.

  • 300g of pork ribs
  • 300g of lotus root
  • 100g of peanuts (uncooked)
  • 1 carrot
  • 8 red dates (seed removed)
  • some cuttlefish slices
  • some wolfberries
  • some dry scallops

Let's get started:

1. Blanch the meat into hot water to wash away the smell.
2. Transfer the meat into a pot of boiling water.
3. Boil for a minute and remove the layer of scum.
4. Add lotus root and peanuts and bring to boil. (carrot, red dates, cuttlefish, scallop, wolfberries can be added at the later part at own discretion.. lol..)
5. Cover lid, reduce heat and simmer for 2 hours.
6. Add salt to taste before serving.

Chinese name of the dish : 莲藕花生干贝鱿鱼红枣枸杞子萝卜排骨汤
